Disaster! Under-roasted chocolate! It is too acidic!
I roasted and refined my second batch of Dominican Republic Elvasia '13 this week (the first is delicious) but this time I roasted a pound at once (in my tiny convection toaster oven) instead of half a pound twice. It was more than one layer of beans in the pan and the roast profile that worked before produced a significant under-roast.
"These beans aren't done," the little voice in my head said.
"Nonsense," I said. "I thought last time it was a little too mellow and a bit more of the fruity flavors would have been nice. This will be just perfect."
Curse you and your always being right, little voice in my head.
It's not *bad.* There might be a very slight off flavor, but mostly it's just mouth-puckeringly acidic. Definitely acid and not bitter. I could maybe blend it with a heavier roast. I'm nervous about making milk chocolate because milk + lots of acid = maybe not good eats? Also, if I add milk powder and refine it again, would I risk over-refining (and what would that look like?)
What would you do, forumers?

Depends on the nature of the acid - there's lots of different types of acid, and they all behave differently. You may consider re-roasting or a very long conche cycle with high heat/lots of agitation/open conch if it's an acetic/vinegar type acid.

Thanks, Sebastian! I unfortunately didn't realize just HOW under-roasted it was until it was already conched, so I'll save it until summer when I can get the temps on the Premiere up high, and then give it another round.
Unfortunately, it may just be trash - I tempered a bit to see how it would turn out, and more off flavors appeared.
Learning experience!

Just sell it to friends as raw chocolate, it's disgusting but some people say they like it I under roasted some beans the other week when my drum roaster blew a fuse and I used my oven instead, I just added lots of orange oil and mixed spice flavour to hide it.
