I have a friend who is intrigued that I make truffles from home and would like to try some. However, she has severe eye problems and has been given a strict diet to adhere to. She cannot have any dairy or gluten products so I will probably have to rely on pure products. I can obtain 99% cocoa from a local shop but would love any tips available. Thanks, Patsy.

Do you have a Santha/Ultra grinder? If you do then make, say 70% batch and add cocoa butter for more fluidity and top of with sugar. (please correct me if this is wrong as I do not own a Santha, just know the theory, I know the Mast Brothers in America do a similar 'pure' recipe)
If you don't own one. (I DO NOT ACCEPT ANY RESPONSIBILITIES FOR THE METHOD SHOWN BELOW, DO AT YOUR OWN RISK!!!)
'Other option': Make very 'Crude' chocolate, use a blade coffee grinder to grind up your nibs, you have to do this very slowly, until the nibs turn to a past. Next blend your sugar in a food processor/blender to powder it and then combine cocoa and sugar in blender and blend... for ages (turn it off every now and then), until a chocolate like food is made. Temper and share. (and dream of Santha)
