Most people around here are making their own liquor, and John doesn't even carry any chocolate liquor, I realize. But I'm still curious if anybody has favorite chocolate liquors, what you think about them / why you like them, and where you get them...

Anybody? I do realize most of you are looking to do the entire process, bean to bar, but there are situations where that isn't desirable, or one would like some various bases to experiment with.

I am not aware that chocolate liquors can be bought. I might be wrong, but I have never heard of such a thing.
Edited: I did find a couple of places online via google, but nothing that looks very interesting, and it would be hard to know the quality.

Yes... there are numerous chocolate liquors available, with a wide variety of tastes and even textures. I have sampled a number of them... and I had naturally assumed that you guys would have discovered all the possibilities in this department and had mapped out the tastes and other properties. However, chocolate liquors are not incredibly prominent, not nearly as prominent as finished chocolate - so I guess it never really was fully explored.
Oh well, I'll just keep exploring the possibilities on my own...

There are a lot of producers processing to the liquor stage now to reduce the carrying costs of shipping raw dried cacao...I'm aware of several in central and south america, but in general they're still hard to access unless you're within the chocolate industry.
Keep in mind that if you can get your hands on them then naturally it saves you a couple of steps, but then again you give up the control over roasting....
