I'm wondering if anyone has found a source for refined organic white sugar in less than container load quantities. Most of the organic sugar sold in the US is less refined, which leaves it with a distinct molasses flavor. For some recipes this is fine, but it's not a flavor I like in my chocolate.
In Europe, organic refined white sugar seems more commonly available. Apparently, this is partly because most European sugar is beet sugar, and producing organic beet sugar is easier than producing organic cane sugar.
Has anyone else found a supplier? I've read that Theo Chocolate is organic sugar imported from Sweden. Does anyone know of other chocolate companies that are using this in their organic products rather than evaporated cane juice?

I am hoping to have a couple different products coming up in the next month or so. A couple different organic sugars. Let me check, but I am pretty sure there is white (and "unrefined") organic available.

Another good option for people seeking extremely pure solutions is dextrose (glucose) made from an organic, non-allergenic source like tapioca. The sweetness isn't quite as high as sucrose, but it certainly will refine into chocolate just fine and some may appreciate a milder sweetness. This eliminates ALL questions and concerns around bone char, etc. Also, the refining process used to yield white sugar typically involves a variety of non-organic items such as calcium hydroxide and bleaching agents. Conversely, tapioca dextrose is produced by simply treating tapioca with naturally occurring enzymes, then drying.
