Dear all I am new on the forum and need your advices. What is the best temperature and humidity to be in the Production Room? What is the best temperature and humidity in Refrigeration Area as per picture in below?
My concern is to have normal ambient temp/humidity in production room (i.e. +22-25C and humidity 40-60%) where we will temper and mold chocolate; and needed temp/humidity in Refrigeration Area where we will cool molded chocolate (and probably keep it)

Hello. The short answers are that the production room should probably be around 21C (70F) and the refrigeration room should be 12-13C (55F). Humidity-wise, basically the lower the better, but certainly under 50%. I try to keep mine under 30%.
This has been discussed here in the forums several times in the past, so dig around in the older threads for more info and other perspectives.
