Hi all,
I don't own an oil press (yet) to make my own cocoa butter, so I'm still purchasing cocoa butter to add to my chocolate. I'm working on a chocolate using Arriba Nacional beans and recently found cocoa butter made from the same bean. However, it's made from unroasted beans. I'm well aware of what an under-roasted bean can do to the flavor of the chocolate, so I'm a bit hesitant to use it. How does roasting affect the cocoa butter? Will this affect the flavor of my chocolate? Thanks!
