From watching the Alchemists video's, it looks like the cocoa butter silk method of tempering is definitely the easiest. But it looks like the Alchemist is all out of silk for a while.
Do you guys suggest trying the two-bowl method or looking for somewhere else to buy cocoa butter silk?

Get an inexpensive sous vide on Amazon then follow John’s directions on this site. It’s easy and works well.

Chip - Okay, but I was hoping for an *easy* intro to chocolate making I was hoping my first run would just be about buying a Melanger, some nibs, cocoa butter and milk powder.

I'm still mulling over getting into the chocolate making thing since it's a pretty significant time commitment. In other words I haven't yet bout a Melanger My real concern is that I might drop this hobby after a few months (as I've done with other hobbies...). Do you know if people here would make chocolate "to order"? I could still see this requiring experimentation to get a recipe right, but at least I would have someone else's time and expertise which would be a huge help.

Ben - thank you - I did watch the alchemists "two bowl" method which is probably what I'll end up trying. I guess so long as you are careful not to drip water and control the temperatures well it should work.

You're welcome. I've used this method several times and have never had any issues. Temperature control and agitation are key.
