Hi all, I have bought a new premier grinder and have attempted to make white chocolate. Before using it to make chocolate, I have run it with only sugar in it for 5-6 hours. The chocolate has come out so grey, I don't dare use it. I assume this is stone dust. Does anyone know how to get rid of it? Thank you for your help!

Hi Chip, I have actually read the whole thread but I am not sure it's the same problem. I have no chocolate running into the motor housing (for which I am very grateful as I would have no idea how to install a new motor or belt) and thought this might just have something to do with it being new.

Hi Monstie, The gray material is coming from the wheel shafts of the grinder itself. It works it's way into the chocolate. I don't think Diamond has quite figured it out yet. If you contact Bhavani at Diamond he will help you out. They are very, very good at customer service.

I think this could just be stone dust as you say. You have to run new stone grinders for a while with just oil, sugar, etc. to break in the wheels and stone base.

thought this might just have something to do with it being new. This is correct. Both when mine was new and when I installed a replacement wheel, I did burn in runs with oil and sugar, and the resulting oil/sugar mixture had this gray, and especailly some coming from the wheel spokes. Once everything is worn in it stops. I know some of it is stone dust, but I don't know why that would come from the axle area when dumping a batch, which is what I have witnessed. I suspected maybe some sort of food safe lubricant perhaps. Unsure, but again, it will stop happening soon enough.

Thank you everyone for your help! I have run 2 more batches with just cocoa butter and sugar and it is getting better!
