I am making my own cocoa butter silk with the sous vide at home. How can you tell if it was tempered correctly. Silk and regular cocoa butter look the same to me.

Follow the directions on this site. The silk will come out about the consistency of oatmeal. When it solidifies it will be slightly lighter in color than regular cocoa butter.

The silk will also be opaque whereas melted cocoa butter is transparent.

I have just made some of my own silk and it comes out exactly as described, consistency of mayonnaise and slightly lighter in colour. I found the process very straight forward, I tried 2 batches one for 12 hours one for 24 hours, with no noticeable difference between the two. Set my sous vide cooker to 33.6C and put the cocoa butter in vacuum bags and then into the bath, waited 12 hours then took one out a further 12 hours then the second one out, both looked exactly the same. Tempered some 60% dark with it and its probably the best attempt at tempering Ii have done, nice snap lovely and shiney.
