I am developing a business plan. I am disabled, but can manage a Revolation Delta and made a few hundred truffles over a week. I use a dental vibrator that I need to walk a step to.
An investor who likes my chocolate asked me a question: if there was a healthy full time employee and a better tempering machine like a Selmi One, how many shell molded truffles could someone produce in a week? This is assuming there would be someone else to package them.
It takes me 4 minutes to fill, shake, and dump a mold. It takes me maybe an hour to make the filling and fill 120 chocolates. It's only a few minutes to seal them. There's time needed to let things set and cool.
Should I Include clean up time?
I'm estimating a fairly healthy person could mold, fill, cap, and knock out 2000 truffles a week. Is that reasonable?

I have a chocolate company in Ga and am having to produce 7,000 truffles a week now with tempered chocolate. I have a temperer that holds 9lbs and I am trying to find the most efficient way to fill each mold so I dont have excess chocolate to dump to then have to re-temper. Ive heard using a paint brush is a good idea but I feel like that will take me years to make 7000 chocolates every week. 2000 is definitely do-able but you may want to invest in a larger temperer. Im finding that I will soon have to do that
