I am also new in this game.
I am making small batches for my own use. I am doing this to combine the taste of great chocolate with the ability to control the quality of the stuff that we eat.
I will primarily make dark chocolate with a minimum amount of sugar and indigenes, without the bars get to bitter. I believe this can be obtained by using the right beans.
I bought a wet grinder, molds and the stuff for home production. So far I have made tree batches with 75% cocoa content: One with Criollo liquor (I don’t know the origin), one with roasted Trinitario nibs from Colombia and the last one with 50% of each. They all taste good, but I haven’t found the taste that I am looking for.
I finished a batch made with Madagascar Organic - Sambriano Valley roasted nibs yesterday - so I am looking forward to taste. I have a shipment of unroasted Maranon nibs on the way. So now I have to try roasting – yes - I buy nibs I am too lazy to crack and winnow the beans for now.
I would like to try other flavors and beans. So I am looking for retailers in UK or inside the European Union that carries a broad variation roasted or unroasted cacao nibs. Do you have any suggestion?
