Hi all, I've just received my melanger/wet grinder and very excited to get started. I've bought some cocoa nibs to try in the machine (as I have yet to purchase the whole bean and experiment roasting and grinding it) and i've been reading the 'How to Make Chocolate Guide' on the website. It says to heat the nibs to 120-150 degrees F. Could anyone explain how I do that? If I was melting cocoa liquor the heating part would make sense as I would just test it with a thermometer. Will the cocoa nibs melt if I put them in a bain marie?
It also says to pre heat the sugar and the bowl and rollers..again i'm unsure on how to do this!

When I was making chocolate at home I simply used a blow dryer

Hi Brad, Thanks for your reply. How do you measure the heat of the nibs when using a hairdryer? Or how long did you heat them for?

You could also put a bowl of nibs, grinder, and wheels in an oven set to warm. Or, what I do is just start the grinder, add a little bit of nib to the bowl cold, and then use a heat gun to warm everything up for a few minutes.

I warm my cocoa butter and nibs in a pan in my kitchen. When it feels right I pour it into the machine.
This stage is not essential but it is much easier on the machine. Skip this step and you'll have to keep stopping the machine to scrape solid gunk off the rollers and scraper to get it going properly again for the first 10 minutes or so. Plus your machine will sound a bit overloaded and unhappy.
