Please help. Im new to choc making and even tho I'm tempering or I think I'm tempering the chic right but I keep getting a mottled finish, I'm using silicon moulds, any ideas why this is happening? Also I keep getting bubbles in the finished choc even though I give it a good tap, can anyone help me please? Thank you

Hello. It could be a lot of different problems. Can you post a photo of the results you're getting to aid in troubleshooting?
For the air bubbles, a tap or two isn't going to get them all out. You'll need to repeatedly drop or whack it on the table, and even then you'll probably not get them all out. A vibrating table really helps with this, and can be had rather inexpensively. There are lots of discussions in these forums and on The Chocolate Life about DIY vibrating tables using dental vibrators or even back massagers.
