How much effect does leaving a batch chocolate to rest have on the end taste?
Some makers leave for a month, some temper straight after conche.

I've been looking at this too especially after coming back from the NW Chocolate show. I never hear a month - most seemed to be a few days to a week. Do you know who is doing longer? I can tell it changes the taste (less acidic for some, lower bitterness) and have been playing with this variable as well.
