Hi I just got my Santha 11 and I'm excited to make chocolate. I made a small batch of John's Big O blend and I made a nice white chocolate. Before all of that, I ran the machine with sugar to clean it as prescribed by the manufacturer. So that means I've washed it 3 times with soap and water. I was getting ready to make some dark chocolate, and I noticed some sticky black stuff leaking out of the axle hole of one of the rollers. When I took it apart, there was black grease on the axles. It wasn't brown like chocolate; it was black so either it's a machine lubricant or the stone roller is grinding itself up and the particles built up in there with some cacao butter, or maybe the steel axle is wearing down and particles of that are oxidizing and turning black. Even if this was grease applied by the manufacturer, I don't really want it in my food. Should I clean it off? Does anyone have any ideas of what's going on or what I should do about this?
Also, the machine is very load and shakes the whole kitchen. (Our home was built in the 1950's.) When the Santha 11 is running, I can feel the walls shake and light reflecting off the window jiggles around on the floor. Is this machine supposed to run more smoothly? Or is this experience typical?
I also noticed that when I hold onto both rollers (after taking them out of the machine) if I have my wife take a hold of one of the scrapers and spin the whole thing around, I can tell that the 2 axles are not parallel with each other. This would seem to be a problem and maybe is what's causing the rumbling, but I suppose it could be by design also. What do you think? Should I ask for a replacement before I go any further?
