All winnowing is a pretty broad statement. Can cyclone winnowing work for cocoa? Sure.

Sebastian, thank you for your answer. I'm not sure what you mean by "all winnowing".
In my case, I want to be able to winnow cacao beans at home without taking up too much space.
Are you saying that a shop vac with a cyclone attachment (as the one in the video) could work for winnowing cacao beans?

Here's a photo of my winnowing setup at home. You can get the plans from here: www.realseeds.co.uk/seedcleaner.html. Not expensive to build. In my case i use a variable speed vacuum. Regards, Thomas

I use the cyclone to separate the particles from the airflow before it goes into the vac, therefore not clogging the vac filter and maintaining suction. However over time the particles are starting to melt and wear out the side of the cyclone.
You can make a simple winnower using a bit of downpipe, Ive been using my one for three years now, no complaints.
