Hello, Normally I am not one for 'flavoured' chocolates. I like my chocolate dark and strong! However I tried a dark chocolate with butter and salt which I really enjoyed. I have done a little bit of simple home chocolate making with cacao butter, cacao powder and sugar. (so not the real deal from scratch - hopefully one day!) The recipe I followed was roughly 40% Cacao Butter, 30% Cacao Powder. I am interested in trying to make a salted butter dark chocolate and was going to just guesstimate proportions - however in the meantime I discovered this forum and thought it may be worth dropping a line and hopefully getting some help with proportions. Is anyone able to give any ideas approximately what percentage of butter I should use? Thanks.
