Hello-
I am starting a small bean to bar operation outside of the US and have around $2500 to buy equipment. I would like to produce a minimum of 100-200 3 oz bars per week to start. I have a crankandstein, a champion juicer (craigslist find for $25!) and a friend building a winnower. I had planned on roasting in my oven to start.
I am unsure if I should buy a larger melanger/concher- I found a new spectra 20 for $1560 delivered and hand temper (which I'm experienced with but not great) or buy a small used temperer like the ACMC (ebay for $500).
OR
Buy large temperer (ChocoVision C116DELTA) for $1425 and buy two Premier 2 liter melangers ($500)?
I had planned on using recycled molds to start.
I guess I am unsure of how much the little Premier can churn out and what would make my life easier. I was hoping for some experienced advice instead of my usual mode of endless research, making an educated guess, then wishing I had done it different like my last business.
And lastly, if you recommend buying the 2 Premier grinders is there any difference between the 2liters tilting and the 2liter non tilting versions?

I've never used either machine, so I can't comment directly on that. But, purely from a continuity point of view, having two machines means that if one goes "on the blink", you can still run the other while it gets repaired.

The 2L tilting and 1.5L Wonder Grinders have ventilation required for the longer run times required for chocolate making. I use mine batch after batch. Slowly adding ingredients to the Wonder Grinders helps reduce the ware on the machines and helps increase the amount of chocolate you can get out of these machines (9 lbs and 7 lbs for the machines). I wouldn't want to (and don't) hand temper chocolate. Having a tempering machine makes it a lot easier and allows you to spend your time doing other things (which you will need if you are starting a business) while the machines are bringing your chocolate to temper. I like the Wonder Grinders so much that I now sell them (the Alchemist no longer sells the Wonder Grinders due to a conflict of interest but still likes these great little machines) on my website at indichocolate.com/collections/chocolate-making-machines. Hi thank you for all your help in the past. Time to upgrade my equipment. What are the best deals on a conches and a roaster. I would be roaster about 8 lbs of beens at at time. Mahalo, Bob.

No point putting the cart before the horse. right now you need equipment to make chocolate. A tempering machine is a 'nice to have'. Sell enough chocolate that you have made, and you can buy a tempring machine.
