Im planning to start my first attempt tomorrow. I have already cracked & winnowed. I have a champion juicer & a santha 11. I have read that some ppl use the champion to grind while others skip that step & go right into the santha. I think the direct to santha requires heating first. I do not have an oven available, only a hair dryer. I would prefer to skip the mess that I have read comes from the champion if at all possible. Any thoughts? thanks

....Also, does anyone leave the melanger running unattended over night? If thats a bad idea would I be able to melt it enough the next morning with the hair dryer? If not would a heat gun work? thanks

You can use a hairdryer to heat the grinder - that's fine. Only add a little nibs at a time to the Santha (preferably run them through a food processor first if you can to reduce their size). It would also help a little if you had some hot cocoa butter at the start when you add the nibs (if you are using cocoa butter in your recipe). I leave my machine running overnight, but you need to decide whats right given your circumstances.
