I seem to have a problem when dipping with chocolate. I use the same batch of tempered chocolate and the same batch of truffles. If I roll half of them in the chocolate they are fine. But if I dip some in the same chocolate they bloom. It doesn't matter what order I do it in either.
Can anyone help?
