My Santha is is turning about 33 times per minute. I can't easily measure the speed for the rollers.
It's loaded with 7lbs of fairly thick 71% chocolate. The motor seems to be struggling and the speed is uneven during the turns. Is this normal?
How slow is too slow?
I ask because I've had a batch seize up before; I'm a bit anxious to leave it on overnight.

Hi Daniel. I'm not sure how fast it should be going, but 33 rpm is really slow. Did it ever speed up?
How did you load the melanger? Did you let the nibs become liquid before adding the sugar?

I just got to check on it: speed is now 20 RPM. In 9.5 hours, temp has gone down from 44.1 C (111F) to 37.6C (100F). I hope this is just because it was really cold overnight (currently 14C/58F, it was also very humid)
The liquor was ground in the Champion and then added to the conche for 6 hours before I could get around to adding sugar over several hours - some of the sugar I powdered in my blender.
Proportions, in grams:
cocoa 2054 64.31% butter 210 6.57% sugar 930 29.12% 3194 100.00%
Currently applying some heat, which seems to be helping a little. After 40 hours, it might just be time to call it done and order a new belt.

Yeah, that doesn't seem like it should be too thick for the melanger. A new belt may be a good idea (get the fiberglass link type--they're so much better). You mentioned that the motor seemed to be struggling, though, which would suggest that the belt was ok. If the belt was slipping, the motor would just run unimpeded.
