Hi, I'm pretty new to the world of creating chocolate. I want to venture into it even if I want to experiment on my own. I'm spending my own cash to buy the necessary equipment to make bars for experimentation. I have a supply of good cocoa liquor, powder (alkalized) and butter, because of connections, pretty cheap in fact. I can assure that the quality is good because they export it to Europe and U.S.
Correct me if I'm wrong with my process in creating chocolate bars:
1. Melt liquor and butter
2. Place in the melanger (most probably spectra11) with sugar
3. After conching, put in the tempering machine (most probably choco vision rev2)
4. Temper and Place in mould.
Any help would be appreciated.
