I really want to make a honey milk chocolate but what I tried (just mixing them together) seizes the chocolate due to the water content in the honey. Some people have told me of using dried honey or adding the honey directly to the chocolate, no more than 5%, during the conching process but I'm still not sure about it. Is there a tip for making honey milk chocolate succesfully?

C-spot ran an review of the Chocolate Conspiracy which uses regular honey and not powdered honey as a sweetener in one of their bars. They said it worked pretty well and tasted pretty good. I think they also mentioned that you have to have the right equipment and know when and how to pour the honey in.

I would just try to make "honey sugar" by boiling out the water in the honey and then using as a normal crystalline sweetener, if you don't want to use powdered honey.

That would probably give you a lot more variety over flavour choices too

That sounds really interesting, Cheebs. Have you ever tried it? I am wondering just how workable the honey reduction would be. Like whether it would be the consistency of a paste or more like a hardened oil or wax.

On another note, the good folks over at Naive Chocolate were just awarded a gold medal in the international chocolate awards (EU). Congrats to them.

I tried Alchemist John's formulation with cachaça (brazilian sugarcane spirit) instead of vodka and it worked perfectly! Nice formulation! Do you think is it possible to increase the final amount of honey to 40% instead of 20%?
