Hi,
I have made some great nib and sea-salt dark bars and they tasted fantastic for a couple of weeks, but then the flavor of the nibs started to deteriorate, go bitter and strange. How can I keep the nibs in good condition for longer? Including it in the chocolate might help but not sure.
How do you make sure that your nib and nut bars keep well for longer?

I wouldn't expect them to do that. I assume they were roasted, and the bars were stored in appropriate conditions? Nibs in bars should be good for a long time.
