Hello My son is just about to make a presentation at school on cocoa from bean to Cocoa drink. We live in Switzerland famous for its chocolate : and have just come back from a trip to the Dominican Republic where we took the children to see where and how the cocoa, grows and how they produce cocoa... We now want to go to school and make a cup of Dominican Hot chocolate for his class after showing thr class the various stages in preparing the beans. the pods are now a few weeks old, can we still use them? If so can we ferment them? They then need air dried, can i use my food dehydrator? then oven roast as you recommend. We would be very grateful for any feedback! Carrer family

In sequential order of your questions: Probably not; Only with great difficulty; Yes; Yes.
You are better off just buying some Dominican Republic beans from John Nanci on this site or contacting a company like Felchlin in Switzerland that also has beans from the Dominican Republic.
